What are Microgreens?

Microgreens are tiny green shoots grown from seeds of various edible vegetables and herbs.

Microgreens usually grow to a height of 2.5 - 8.0cm and are ready for harvest within 7-14 days after germination.

Microgreens encapsulate an abundance of vitamins A, C, E, K that are known to have protective benefits against cardiovascular diseases and cancer. According to microgreen research done by a research team in University of Maryland (USDA), cotyledon (seed) leaves in microgreen shoots contain significantly higher concentrations of nutritients as compared to their fully matured leaves.

Besides being a nutrient powerhouse, it provides myriad of intense flavors, vivid colors and tender textures which makes it a popular ingredient in modern cooking. Imagine the usual flavours in your favourite vegetables concentrated in a small seedling!

What is the difference between Microgreens & sprouts?

  1. For growth media, Microgreens grow soil & Coco peat, while Sprouts grow in water.

  2. For Maturity / Growth Period, Microgreens takes ~7-12 days, while Sprouts takes <7 days.

  3. For edible part(s) of plant, we will harvest leaves & stem for Microgreens, but we will harvest stem & seed for Sprouts.

  4. In terms of nutrition value, Microgreens have higher nutrition value deprived from fully developed stem & leaves, while Sprouts have lower nutrition value derived from seed, stem and underdeveloped leaves.

Why should I invest my time in microgreens?

Fruitful investment of time which not only feeds your stomach but also your mind. Its a fascinating & therapeutic process to observe plant growth, seed germination - harvest, in just two weeks.

Difference between microgreens & matured greens

Main difference between microgreens and matured greens is its nutrition value.
In comparison, microgreen cotyledon leaves possessed higher nutritional densities than mature leaves (USDA National Nutrient Database, 2013).
Consumption of microgreens not only provide abundance of vitamins and antioxidants, but also a plethora of flavours. While mature greens are mainly consumed as a source of fiber and water for proper digestion.
